Smoked Turkey Swiss Apple Cranberry and Pecan Grilled Panini Recipe

This is a great recipe for Thanksgiving leftovers, when you don’t know what to do with so much smoked turkey meat. Or for one of those busy days when you do not have the time to go to the stove and cook.

Ingredients

2 Buns (panini, ciabatta or other)

1½ Cups smoked turkey meat, sliced

1 Apple, cored and sliced

⅓ Cup chopped pecans

⅓ Cup dried cranberries

4 Slices Swiss cheese

2 Tbsp olive oil

Preparation

Slice open the buns.

Assemble the paninis by placing apple, sliced turkey meat, chopped pecans, and dried cranberries on the bottom bun. Place the Swiss cheese slices on top and cover with the top of the bun.

Brush the panini press or grill pan with oil and heat to medium-high heat.

Place the assembled buns on a panini press or grill pan and close the lid. Heat until golden brown and the cheese is oozing out. If using a grill pan, flip after about 2-3 minutes.

Cut in half and serve immediately.

Note: If desired, use slices of bread to make a delicious grilled cheese sandwich!
