Smoked Strawberry Shortcake Recipe
Ingredients
1 Pint of strawberries, hulled
6-8 Mini (individual-sized) angel food cakes
4 Cups whipped cream
½ Cup maple syrup
Fresh mint leaves for garnish
Preparation
Set the smoker to 275ºF using fruit wood bisquettes (like cherry or apple).
Lay a sheet of aluminum foil on a smoker rack. Evenly spread the strawberries across the aluminum foil. Place the rack in the smoker and smoke the strawberries for about 1½ – 2 hours.
Remove the strawberries from the smoker and chill in the fridge.
Slice the strawberries and assemble the shortcakes, by placing a mini angel food cake on a small serving plate. Top with sliced smoked strawberries, a dollop of whipping cream and drizzle with maple syrup. Garnish with a fresh mint leaf.
