Smoked Cornish Game Hens

This recipe makes a perfect special dinner for a small family. Or you may prepare it when you want to add a touch of elegance to your dinner party. You’ll use common spices, that you probably have on hand, to create a delicious alternative to roast chicken or turkey. It’s a simple recipe that requires no marinating, and the smaller birds will cook quicker than chicken or turkey as well.

Ingredients

2 Cornish game hens

2 tbsp butter, melted

1 tbsp salt

2 tsp black pepper

1 tbsp basil

1 tsp oregano

1 tsp thyme

1 tsp cayenne

Bradley Smoker Hickory bisquettes

Preparation

Pat Cornish game hens dry and rub with butter.

Combine spices and rub all over the birds.

Run the smoker with hickory bisquettes (pucks) at 275°F until an internal temperature of 180°F is reached.

Serve immediately with your desired side dishes.
