How to Make Smoked Polperro

Ingredients

Polperro

Salt

Pepper

Seasoning of your choice

Preparation

Sprinkle your salt, pepper and seasonings of your choice on your polperro, make sure you sprinkle the seasoning on both sides, set it aside and let it marinate for 2-3 hours.

Once it's done marinating, heat up your Bradley P-10 smoker and place your polperro on the hanging hooks. You'll want to hang them so the heat in the smoker hits both sides of the polperro equally.

Set your temperature for 225ºF (107ºC) and set the time for 2 hours, occasionally check up on your polperro to make sure it's not getting too overcooked.

Once the time is up (or if you feel it's done smoking) bring out your polperro and enjoy!
